Pots and Thoughts

Hi and welcome to my blog about food and things. You may find recipes, stories, photos etc. with food as a theme. I want to share simple, inexpensive but real food ideas. Enough of the fast food fakery. I live in rural Manitoba, Canada and the recipes and ideas will mostly reflect what I can purchase locally. I hope you will find something here that may interest you.

Hello & welcome to Gardening In A Changing World. I grew up on an Ontario farm where a yearly garden was part of our life. I have lived in many places in Canada and have done some type of garden in most places. From a Toronto balcony container garden, an Inuvik veg patch and my current raised bed (mostly) have provided me with much enjoyment and a supply of fresh, wholesome food.

CreativeSometimes we are intimidated to try a new or different thing. Cooking...we look at the glossy photos of perfect recreations of a recipe and think to ourselves, "I could never do that". In reality the food in those photos has been glued, starched, filled with cardboard, sprayed and primped with whatever will make the item appear perfect....but you could never actually eat it.

Real food may not appear perfect. However, with a bit of thought, creativity and care, you can improve the appearance and taste of a dish.

If you are planning a meal, think in advance of the dishes you will be using for serving and eating. Is the colour of the plate appealing against the colour of the food? Is the shape conducive to holding the food? Does the garnish make sense to the dish?

For example, you obviously would not serve soup on a flat plate. Food items should not be hanging over the edge of a plate. The plate should be neat and clean in its presentation.

Have you ever gone to a restaurant where the sauce or gravy was slopped over the edge of the plate or soup dripping down the side of the bowl. It is a careless gesture and for me, I think that if they are that unconcerned with how their food is presented then it makes me wonder what goes on behind the scenes.

Think in advance about your menu regarding about the colours, textures and tastes of the food. Is is all brown or white. It's easy to brighten up a dish by adding for example something to the dish (for example chopped red pepper and green or purple onion into white rice, or a simple garnish on the plate, perhaps a sprig of fresh herb.

Personally, I like plain plates as opposed to dishes with a design but this is a personal choice.

Regarding flavour, it's probably best to avoid too many strong flavours in either a dish or a meal. They tend to conflict with one another. At the same time, a bland meal without any seasoning or herbs is just that...a bland meal.

Experiment, be creative and enjoy. And don't worry, it's not the last supper. If you don't like it or it doesn't turn out the way you thought it would, do something different next time.
